Stressful Days Call For Awesome Workouts & Food

Hi guys!! Sorry this post is so late tonight!  I had a very long day between work, errands, and the gym. I went to leave for work this morning and found that one of my tires was extremely low. Turns out I have a slow leak. :-(  This called for an iced coffee from Dunkin Donuts

My breakfast was fun! I mixed 1/2 cup of Vanilla Almond Special K with 1/4 cup of Kashi Oat Flakes with Blueberry Clusters and topped it with almonds, blueberries, and skim milk

Kashi sent me a coupon to try a product for free. I can’t wait to pick something out! I love Kashi!

Work was very busy. I barely had time to stop and have a snack. I  finally managed at around 10:00.

I scarfed down a  hard boiled egg which kept me going till lunchtime. Lunch was amazing after spending 30 minutes trying to un-jam the copier. I finally sat down at about 12:30 to eat leftover Veggie Quesadillas from last night

Let me tell you, Quesadillas do not reheat well. These were mushy and greasy and not even half as good as last night. Oh well!

After lunch, I ran around the office for another 3 hours and  then ate some fruit at 4:00

I also had a cup of Green Tea somewhere in there

After work, I did some errands for my mom and then headed to the gym. I snacked on half of a Chocolate Brownie Z Bar before my workout.

I did 60 minutes on the crossramp elliptical (6 miles) and 2 sets of bicep curls (20 reps) . Then I stretched, ate the other half of my Z Bar, and drove to my parent’s house. I watched Friends and Seinfeld on the elliptical. I love being able to workout and watch TV at the same time!

Dinner was an Egg & Zucchini Sandwich

What I used:

  • 2 eggs
  • Zucchini
  • Small amount of Pepper Jack Cheese
  • Basil
  • Black Pepper
  • Hot Sauce

I scrambled the eggs with all the ingredients and put it all on an Toasted Arnold Select Multi Grain Sandwich Thin. I had Blue Corn Tortilla Chips with Mango Peach Salsa on the side.

This sandwich was just what I needed after a long day. It was so good! Try it!

Dessert was a couple blocks of 85% Dark Chocolate

I love the bitterness of this chocolate.

Now I am just relaxing and waiting for my Aunt and Uncle to get here. They flew in from California tonight and they are staying at my parent’s house for the remainder of the week. Every time I see them I want to move to California.

If you could move anywhere, where would it be?

    California!! I was born there and my parents had to drag me to the midwest, darnit. Somewhere warm preferably with the ocean and mountains close by :)

    NYC is definitely amazing. I’ve been there a bunch of times because I live so close. I’d love to live there. California is awesome too! :-)

    I’m on a mission to move to San Francisco…it’s been a 2 year long mission haha. Fell in love w/SF when I ran my first marathon out there and MUST return!

    Have you tried reheating quesadillas in a toaster oven (not that most offices have toaster ovens)?

      I wish my office had a toaster oven. That would have been ten times better! I have never been to SF! My cousin lives and went to school there. I love California! I’ve only been to LA
