Peanut Butter Jelly Time!

Hey Guys! Thanks so much for your comments about my collage! I really enjoy making them!  If you haven’t already, check out my collage inspired by Caitlin’s Operation Beautiful !

The weather is so gross out! I really hope it doesn’t stay this way for Fourth of July weekend! I’ve had enough of rain! I need the sun!! What are your plans for this weekend?

I feel like I’ve been eating all day! Lunch was a little kid classic

PB & J on WW Toast

1-7yogurt

Plus 1/2  a Vanilla Oikos Greek Yogurt with Strawberries and Blueberries mixed in. Yum!

I was feeling a little hungry around 4:30, so I had this

1-7applesauce

Mott’s Blueberry Delight Applesauce :-)

After my snack, I did some strength training in my living room. I used weights and an exercise ball. I also did a bunch of crunches.

I knew I was going to a Pilates Class at 7 and I wanted to eat dinner after I got home so I had this amazing snack at around 5:30

1-7almondbutter

  • Kashi 7 Grain Crackers
  • Almond Butter

This kept me full all the way through my class.

For dinner

1-7lasagna

I swear, I’m going to be eating leftover lasagna for the rest of my life! I finally put the other half in the freezer. The sauce has been hurting Jeff’s stomach so the leftovers have been all mine.

Dessert was decadent

1-7mousse

I made Hungry Girl’s Chocolate “Mousse” again. This one was better than last time’s for some reason. I added semi sweet dark chocolate chips and  a small drop of cool whip free to the top.

Well, my abs hurt from Pilates and crunches. I have so much to do tomorrow. I have to clean and get ready for my friend Dara’s arrival Friday morning! So excited!!

    I don’t know how you make the Hungry Girl mousse, but be sure to try vegan mousse too. I’ve made a couple varieties myself, not knowing that coincidentally they were commmon vegan recipes, but they are really good… involving dates, avocados, etc :)

    I eat hungry-girl’s chocolate mousse every night for a little snack. It’s my favorite!!!
